Soju 소주 is the #1 distilled rice spirit in Korea and also becoming well known to the rest of the world. Soju is usually made with rice, wheat, or barley, and some brands use potato or sweet potato. Soju has a clean and smooth aftertaste, perfect for both consuming neat and as cocktails. Unlike other clear distilled spirits like Vodka or Gin, soju's alcohol proof is between 14% to 20%, depending on the brand.


Soju Cocktails have become super popular at restaurant bars, here in the states as well as abroad. Soju Cocktails first became popular at Korean-American bars, with endless options of flavored soju cocktails. Soju 소주 is the #1 distilled beverage in Korea and also becoming well known to the rest of the world. If you do not have any soju, you can substitute it with vodka.


My personal favorite is Chamisul Fresh Soju, but any brand will do. I highly suggest flavoring your own Soju Cocktail with fresh ingredients (fruit juices and cocktail mixers), and stay away from "flavored soju bottles."

Grapefruit Soju Cocktail Recipe Instructions

(자몽소주 칵테일)

Cut the grapefruit into big chunks that can easily fit into the citrus squeezer. (For today's recipe, one large grapefruit yielded enough to make the cocktail, but this will depend on the size of the grapefruit you use, obviously.) After you squeeze all the chunks, strain the freshly squeezed juice into a fine-mesh strainer. If you don't mind the pulp, you can skip the straining part.

In a larger cocktail shaker, add the freshly squeezed grapefruit juice, soju, and simple syrup, using a jigger. You can alter the amount of simple syrup, according to your preference of sweetness. Add 4 to 6 ice cubes into the shaker. Place the small shaker (brim facing down) into the larger shaker. Tap on the bottom of the small shaker to seal the two brims tight. With both hands on the sealed shakers, shake vigorously, in an up-and-down motion, for good 15 to 20 seconds.


To unseal the frosted-sealed-tight cocktail shakers: Against the edge of a solid surface (i.e. kitchen countertop), gently tap the outer rim of the larger cocktail shaker, as shown in the video. It might take two to three taps to release the seal. Also, use your hand to gently shift the smaller shaker from the seal. Use a straw to taste-test the cocktail mix. Adjust according to your preference of more tartness (add more grapefruit juice), more alcohol, and/or more sweetness. If you add more to the cocktail mix after the taste-test, place the shaker back on and shake again. Place the Hawthorne cocktail strainer on top of the shaker, and pour it into your cocktail glass.


Alternatively, you can use a cocktail mixing/stirring glass, instead of shakers, just like Agent 007, "...stirred, not shaken" 😎


Old-Fashioned-Style Grapefruit Soju Cocktail:

Place a thick slice of grapefruit inside the glass, with the flesh of the citrus leaning on the interior side of the glass. Then add a big cube of ice. If you don't have a big cube of ice, just add 3 to 4 cubes of ice. The ice will hold the grapefruit slice upright. Pour the mixed cocktail into the glass. (You can use a stemless wine glass or any old-fashioned-style glass.) (Optional: Top it off with some whiskey. I added about 1.5 oz but you can add less if you prefer😉) Add a small sprig of fresh mint and one whole clove, which will add a subtle aroma to your cocktail.


Martini Grapefruit Soju Cocktail:

Freeze your martini or coupe glass in the freezer for at least 15 minutes. Take a small wedge of the grapefruit and rub it on the lip of the glass, section of the glass where you want to encrust the brown sugar crystals. (Have the brown sugar crystals in a pile on a plate. I used about three individual packets of Sugar-In-The-Raw brown sugar packets to create a small pile on the plate. You'll end up using less than 1/3 of this.) Quickly, place the part of the glass that is coated with the grapefruit juice on the pile of the sugar crystals. Gently move left to right, and back and forth, until just a coat of the sugar crystals are encrusted on the glass. At this point, you can store the sugar encrusted glass in the freezer, if you plan on making multiple cocktails at once and/or expecting to serve many guests. Otherwise, garnish with a small wedge of the grapefruit. Make a slit in the middle of the wedge of the grapefruit, and place a small sprig of the mint on the corner of the slit. Place the wedge on the glass so it sits on the rim, as shown in the video. Pour the mixed cocktail into the glass. Then drop one whole clove, and your cocktail is ready to enjoy!


Refreshing Grapefruit Soju Club:

In a pint glass or any large glass, add a slice of grapefruit so the citrus part is leaning against the interior of the glass wall. Layer with a large ice cube then some mint leaves, and repeat until it reaches 3/4 of the glass. Pour the mixed cocktail, then top it off with cold club soda, and drop in one whole clove. Enjoy!
