SoJu 소주: Distilled Rice Spirit (14% - 22% Alcohol Content, depending on manufacturer)

If you already did not know, Soju has a clean finish and has far less alcohol compared to your Vodka & Gin spirits😋 This only means that you can enjoy that 2nd or 3rd Soju cocktail and not turn into a pumpkin. INGREDIENTS

(Serving size: 1 Watermelon Martini or Club Soda Cocktail)

3 x 1.5 oz Soju Chamisul Fresh (chilled)

2 x 1.5 oz Watermelon/Raspberry Juice

1 Strips of lemon zest peel

Fresh mint leaves

Cointraeu or Simple Syrup (add, if you prefer a sweeter taste)

8 to 10 oz Club Soda (only for the Club Soda Cocktail)

For Garnishing:

Coarse Brown Sugar (Sugar In The Raw, preferred)

Small lemon wedge

1 Cubed Watermelon

Watermelon/Raspberry/Soju Juice:

1 Pint Watermelon chunks

4 to 6 Rasperberries

1 Lemon zest strip

Ice Cubes (3 to 4 cubes)

RECIPE INSTRUCTION

Chill your martini glass with ice and water. Set aside while you prepare the rest of the ingredients. Alternatively, you can store your martini glass in the freezer for about 10 minutes.

Fill you pint glass with chuncks of fresh watermelon. Using a muddler, break down the watermelon. Then add the raspberries and using a muddler, break it down and mix it well. In another pint glass, place the conical strainer on top. Pour the watermelon and raspberry mixture (about 1/2 to 1/3 of the mixture, at a time) into the strainer. Using a muddler, gently press down the mixture to squeeze out all the juices. In a large cocktail shaker, pour the watermelon/raspberry liquid and soju. Using a vegetable peeler, going in a zig-zag motion, peel a strip of the lemon zest. (Make sure to peel another lemon zest strip to use later.) Twist the lemon zest over the cocktail shaker and drop it in. Then using a muddler, tap and press down on the lemon zest in the shaker to further infuse the lemon oil. Add 4 to 6 cubes of ice. Place the smaller cocktail shaker (upside down) inside the large cocktail shaker. Tap the bottom of the small cocktail shaker to secure its seal. Shake the sealed cocktail shakers (up and down motion) for about good 10 to 15 seconds. To unseal the cocktail shakers, tap the rim of the large shaker on your kitchen counter. Using a straw, do a sample taste. If more sweetness is desired, add simple syrup or Cointreau and shake again.

WATERMELON MARTINI

Optional Garnish:

Using a small lemon wedge, go over a small section of the brim of your frozen martini glass. Then place that part over a small pile of Brown Sugar (Coarse). The sugar will stick to the lemon juiced part of the rim. You can do this part ahead of time and place it back in the freezer until you are ready to serve your cocktail.

Put the cocktail shaker strainer on the large shaker. (Pour out the water and ice in the martini glass or grab your frozen martini glass.)

To Add That Aromatherapy To Your Cocktail:

Take your second strip of the lemon zest and twist over the glass to release the lemon oil and go over the rim (not the sugared part) and the stem of the glass. Then discard the lemon zest strip. Take a large fresh mint leaf, and squeeze over the glass to release the oil. Just like with the lemon zest strip, go over the rim and the stem. Discard the mint leaf.

Pour the cocktail liquid into the into the martini glass. Take a cube of watermelon, cut half way through, starting at a corner of the cube, as shown in the video. Take a small sprig of mint leaves and place it at the half way cut mark. Then slide the watermelon cube where the cut was made. Now, your watermelon martini is fully dressed and ready to parrrtaay😎

WATERMELON SOJU CLUB SODA

Freeze 3 to 4 Cubed Watermelon

In a pint glass, layer with fresh mint leave, watermelon cube, and ice cube. Repeat the layering to the top of the glass. Take a strip of lemon zest and twist over the glass to release the oil and go around the rim. Place the lemon twist on top. Pour cold club soda 2/3 to the top. Then pour the watermelon/raspberry cocktail liquid to the top. You can stir and mix, but I prefer not to mix the liquids so I can drink the cocktail liquid in my first few sips and then slowly incorporate the club soda as I slowly finish the drink.
