For Koreans, instant ramen (aka ramyeon: 라면) noodles are a staple MUST-HAVE Fast Food. It is a quick and economical meal that just hits-the-spot and instantly satisfies your hunger. AND it is super duper DELICIOUS...:-)

In my household, having instant ramen noodles is a BIG TREAT! Everyone absolutely LOVES IT and it is a simple way to feed my family with minimal cooking and clean up. YES, even my husband can make instant ramen noodles for the family.

My favorite way to enjoy instant ramen noodles is in front of the TV. I set my tray of instant ramen noodles on the coffee table, turn on my favorite TV show/movie and just have a wonderful evening of rest and relaxation.

Non-Spicy Instant Ramen Noodles

- 1 Package Sapporo Ichiban Ramen (Original Flavor, please)

- 2 1/2 Cups Water

- 1 Egg

- 1 Scallion (sliced at a biased angle)

- 1 Cold-Cut Slice Ham (substitution options: Spam, Hot Dogs, Vienna Sausage, Turkey Cold-Cut Slice...etc.)

(For my vegetarian/vegan friends: Vegan 'sausage/chicken/pork' meat, TofuTurkey or Slices of Firm Tofu)

- 3 Tbsp Corn (fresh, frozen or canned)

Spicy Kimchi Instant Ramen Noodles

- 1 Package Shin Ramen Black Label Ramen (Shin Ramen Red Label or Neoguri)

- 3 Cups Water

- 1 Egg

- 1 Scallion (sliced at a biased angle)

- 1 Cold-Cut Slice Ham (substitution options: Spam, Hot Dogs, Vienna Sausage, Turkey Cold-Cut Slice...etc.)

RECIPE INSTRUCTION

Non-Spicy Instant Ramen Noodles (Sapporo Ichiban Ramen: Original Flavor)

In a medium-size pot, add the water and bring to boil. Then add the noodles and soup powder to the pot. With the heat remaining at super high, cook for 2 minutes (do not cover with lid). Then add the ham strips (or your choice of meat, protein or tofu) and cook for 30 to 60 seconds, on high heat.

Quickly, transfer the noodles and ham to a serving bowl (leave the broth in the pot). With the heat remaining high, add the egg and cover with a lid, and cook for 60 seconds.

While the egg is cooking, using a pair of chopsticks, pick up the noodles to release the steam and cool down the noodles (as shown in the video). Cooling down the noodles now will prevent the noodles from getting bloated and will make the noodles taste chewy. As mentioned in this video, you can, alternatively, take a hair blow dryer (set it high in cold setting) and cold-air dry the noodles as you pick them up with the chopsticks.

Using a mesh ladle, gently transfer the poached egg to the serving bowl, resting on top of the noodles. Then quickly, blanch the scallions and corns in the broth for 10 seconds or less. Place the blanched scallions and corn next to the egg on the serving bowl. Then pour the broth on top-down, in the serving bowl.

Now your delicious Sapporo Ichiban instant noodles are ready! It looks likes and tastes like a gourmet ramen noodles dish! Make sure to enjoy with some yummy kimchi.

In Korean food culture, having kimchi with your ramen is a MUST...:-) AND it is absolutely OK to slurp your noodles. Just don't splash your neighbor with the broth from slurping too vigorously...ha!

Now, don't forget to enjoy Course #2 with freshly made Korean rice when having your Sapporo Ichiban ramen noodles. The combination of Korean rice and this broth is...AAAMAZZZING!

Don't forget to try these uncooked Sapporo Ichiban noodles as a snack (as shown in my video). It really is an ultimate snack that rivals potato chips, in my opinion...:-)

Spicy Kimchi Instant Ramen Noodles (with Soy Bean Sprouts)

In a medium-size pot, add the water and bring to boil. Then add the kimchi strips, kimchi juice, noodles, and broth soup powder to the pot, if using Shin Ramen Black Label. (Do not add the dehydrated vegetable packet.) . With the heat remaining at super high, cook for 2 minutes (do not cover with lid). Then add the soybean sprouts (make sure to turn over the noodles in the pot so the soybeans sprouts are submerged in the broth) and ham strips (or your choice of meat, protein or tofu) to the pot, cover with a lid and cook for 60 seconds, on high heat.

Quickly, transfer the noodles, kimchi, soybean sprouts, and ham to a serving bowl (leave the broth in the pot). With the heat remaining high, add the egg and cover with a lid, and cook for 60 seconds.

These perilla leaves will immediately start perfuming your noodles with amazing herb smell...SO YUM!

And this spicy broth will be extra yummy (refreshing and clean tasting) from the kimchi and soybean sprouts. You'll love the crunchy bite of soybean sprouts, kimchi and scallions all bursting in your mouth with these soft and chewy noodles...YUM! This is my favorite way to enjoy instant ramen noodles...:-)

Now, don't forget to enjoy Course #2 with freshly made Korean rice when having this spicy kimchi soybean sprouts broth! The combination of Korean rice and this spicy broth is...AAAMAZZZING!

As mentioned earlier, it is absolutely OK to slurp your noodles, in Korean food culture. Just don't splash your neighbor with the broth from slurping too vigorously...LOL!
