Making The Kimchi Sauce Mixture ๊ฒ‰์ ˆ์ด์–‘๋… ๋งŒ๋“ค๊ธฐ

Step One

In a mixing bowl, add the following ingredients:

  • 1 Tablespoon ํฐ์ˆ  GoChuGaRu ๊ณ ์ถง๊ฐ€๋ฃจ (Red Pepper Flakes)

  • 1 Tablespoon ํฐ์ˆ  Fish Sauce ๋ฉธ์น˜์•ก์ “ (๐ŸŒฑVegan Fish Sauce)

  • 1 Tablespoon ํฐ์ˆ  Plum Extract Syrup ๋งค์‹ค์ฒญ

  • ยผ Teaspoon ์ž‘์€์ˆ  Ginger (grated) ์ƒ๊ฐ•

  • 2 Garlic Cloves (grated) ๋งˆ๋Š˜

  • ยฝ Medium Red Onion (thin slices) ์ค‘๊ฐ„ ๋ถ‰์€ ์–‘ํŒŒ

  • 3 Carrot slices (julienned) ๋‹น๊ทผ ์กฐ๊ฐ

  • 1 Scallion ํŒŒ (minced)

Mix well, and let it sit in room temperature for 15 to 30 minutes. This resting period allows the ingredients melt together as the vegetables release its juices and become wilted.


Prepping The Lettuce ์ƒ์ถ” ์ค€๋น„

Step Two

You can use your favorite lettuce. I prefer Butter Lettuce (aka Boston Lettuce) for its crunchy, sweet, and mild taste.

  • 1 Head of Butter Lettuce ๋ฒ„ํ„ฐํ—ค๋“œ ์ƒ์ถ”

Cut the root end off. Discard any bruised and wilted lettuce leaves. Rinse the lettuce leaves using cold water. Use a paper towel to gently pat-dry each lettuce leaf or use a salad spinner to remove the excess water.


Assembling The Lettuce Kimchi ์ƒ์ถ” ๊ฒ‰์ ˆ์ด๋งŒ๋“ค๊ธฐ

Step Three

Make sure to taste test the Kimchi Sauce Mixture, after the 15 - 30 minute period. If you prefer a more salty taste, add just a tad more of the fish sauce. If you prefer a less salty taste, add 1 tablespoon of water. Mix well and taste again. As for the sweetness, it should be just slightly sweet.

Starting with the biggest leaf to the smallest, hand rub the kimchi sauce to the front and back of each leaf. Layer each leaf around a big plate so that you end up a big blooming flower bed of lettuce leaves. Optional: Garnish with sesame seeds.


This Fresh Lettuce Kimchi is best enjoyed when eaten right away. Like any dressed salads, after 30 minutes, it starts getting wilted and watery.

๐Ÿ‰During the summer months, I add a think slice on the lettuce kimchi and eat it together. It has this perfect marriage of spicy salty taste with that refreshing sweet watermelon taste.
