1 Dozen Frozen Dumplings/냉동만두 (🌱Vegan friends, use vegan dumplings)

1/4 Cup Boiling Water/끓는 물

2 Tablespoon Oil/식용유


Dumpling Dipping Sauce/만두 양념간장

1 Tablespoon Soy Sauce (All-Purpose)/간장

1 Tablespoon Water/물

1/2 Tablespoon Brown Rice Vinegar (any mild vinegar will suffice)/현미식초

1/2 Tablespoon Finely Minced Scallions/파

1/4 Teaspoon Korean Red Pepper Flakes (GoChuGaRu)/고춧가루

1/4 Teaspoon Sesame Oil (ChamGheeLeum)/참기름

1/4 Teaspoon Sesame Seed Salt (KkehSohGeum)/깨소금


Dumpling Fried Rice/만두볶음밥

6 Pan Fried Dumplings (chopped with scissors)

4 Cups Cooked Korean Rice/밥

1/2 Cup Green Cabbage - Chopped/양배추

1/3 Cup White Onions - Chopped/양파

1/4 Cup Scallions - Finely Minced/파

1/4 Cup Boiling Water/끓는 물

2 Tablespoon Carrots - Finely Chopped/당근

2 Tablespoon Corn/옥수수

1 Tablespoon Oil/식용유

1 Tablespoon Butter/버터 (🌱Vegan - Soy Butter)

1 Generous Pinch Of Salt/소금 큰꼬집

1/2 Pinch Of Black Pepper/10-12 Turns on the Peppermill/후춧가루 작은 꼬집

RECIPE INSTRUCTIONS


Preheating Frying Pan TIP:

If you can, use a heavy bottom non-stick frying pan.

Follow the test-methods in today's video @2:30 (CLICK HERE) to make sure that your frying pan is well preheated. Because we are flash frying and steaming the frozen dumplings, it is CRITICAL that your frying pan is preheated. Set your stove heat to high and let it preheat for about 1 to 2 minutes (timing will vary depending on your stove's fire power).

To test if you frying pan is preheated:

Sprinkle a few droplets of water. You should see the water droplets dance and sizzle, evaporating in 3 to 5 seconds. Then the frying pan is ready for pan-frying.

If the water droplets are sort of steaming and not dancing on the frying pan, the frying pan is not preheated, and not ready for pan-frying. Preheat the frying pan a bit long and repeat the water-droplet test method.

Now, if you see smoke coming off your frying pan, let it cool off a bit. The only time you want your frying pan to "smoke," is for searing meats, like steaks.


Pan Fry Method #1/첫 번째 방법

  1. Add the frozen dumplings to your preheated non-stick frying pan. Add the 1/4 cup of boiling water. (It is important to use boiling water to continue building on the heat of the frying pan.) Cover the pan loosely with aluminum foil and let it continue steaming on high heat for about 1 minute or until the water evaporates.

  2. Quickly turn over the dumplings and add 1 Tablespoons of oil. Tilt and rotate the frying pan to evenly distribute the oil. Cover the pan loosely with the aluminum foil. Lower the stove heat to MEDIUM, and let it cook for 3 - 4 minutes or until the dumpling skin turns golden brown.

  3. Quickly turn over the dumplings. Tilt and rotate the frying pan to evenly redistribute the oil. Cover the pan loosely with the aluminum foil. Lower the stove heat to LOW, and let it cook for 3 - 4 minutes or until the dumpling skin turns golden brown.

  4. Immediately transfer the cooked dumplings to a plate. Loosely cover with the aluminum foil, making sure there are openings for the steam to vent. Let the cooked dumplings rest for a few minutes before consuming. This resting period is important for the moisture to retract within, making the dumpling stuffing moist, while hot dumplings cool down. If you bite into a dumpling right off the frying pan, you'll end up scorching your mouth, and it also doesn't look so cute when you have to split it out😂


Pan Fry Method #2/두 번째 방법

  1. Add 2 Tablespoons of oil to your preheated non-stick frying pan. Add the frozen dumplings. Tilt and rotate the frying pan to evenly distribute the oil. Cover the pan loosely with the aluminum foil. Lower the stove heat to MEDIUM, and let it cook for 3 - 4 minutes or until the dumpling skin turns golden brown.

  2. Quickly turn over the dumplings. Tilt and rotate the frying pan to evenly redistribute the oil. Cover the pan loosely with the aluminum foil. Keep the stove heat at MEDIUM, and let it cook for 3 - 4 minutes or until the dumpling skin turns golden brown.

  3. Turn up the stove heat to HIGH. Quickly add the 1/4 cup of boiling water. (It is important to use boiling water to continue building on the heat of the frying pan.) Cover the pan loosely with aluminum foil and let it continue steaming on high heat for about 1 minute or until the water evaporates.

  4. Immediately transfer the cooked dumplings to a plate. Loosely cover with the aluminum foil, making sure there are openings for the steam to vent. Let the cooked dumplings rest for a few minutes before consuming. Dumpling Dipping Sauce/만두 양념간장

In a small condiment bowl, add all the ingredients listed above. Mix well and enjoy with your dumplings. This soy sauce dumpling dipping sauce can also be enjoyed with the Dumpling Fried Rice.


Dumpling Fried Rice/만두볶음밥

Since we will be quickly frying everything in just a few minutes on high heat, please make sure to have all the ingredients ready before preheating the non-stick frying pan. (Please follow the directions above for preheating the frying pan.) Have a wooden spatula ready, as you'll be moving the ingredients around the in the frying pan through out the entire cooking process.

  1. Add 1 Tablespoon to your preheated non-stick frying pan. Add the onions, carrots, salt, and black pepper. Sautee on high heat for about 15 seconds.

  2. Add the rice and sauté for a minute on high heat.

  3. Add the pan-fried mandu pieces, cabbage, and corn. Sautee for 30 seconds.

  4. Add the 1/4 cup of boiling water. Sauce for 10 - 15 seconds. (It is important to use boiling water to continue building on the heat of the frying pan.)

  5. Add the scallions and butter. Sautee for 10 seconds or until the butter has melted completely.

  6. Taste a spoonful of the rice with a piece of the mandu. Season to taste with salt. BUT if you prefer a saltier taste, you can also drizzle some of the dumpling sauce on your Dumpling Fried Rice, at table side (see above).

  7. Transfer the fried rice to a plate so the vegetables stop cooking, and stays somewhat crunchy. I always like to have kimchi or radish kimchi/KkakDuGi/깍두기 with my fried rice😋
