1/2 Tbsp Ginger Puree
1/2 Tbsp Fish Sauce
1/2 Mirin (Rice Wine Vinegar)

Using a Microplane, puree the fresh garlic, onion, and ginger. Add all the ingredients to a mixing bowl and mix well. Transfer the seasoning sauce to an airtight container (canning jar is used in the video). Gently pack down the sauce. Then add a small sheet of saran wrap (plastic sheet) on a top layer of the seasoning sauce. Close the lid and store in the refrigerator.
Bonus Recipe: Spicy Korean Red Pepper Condiment; 다대기 (DaDaeGhee)
Follow the instructions above, minus adding the GoChuJang (Korean red pepper paste). You can use this spicy condiment to spice up your mild/non-spicy soups/noodle broth, like a seasoned Korean foodie😋
Ideally, letting this seasoning sauce ferment in the refrigerator is recommended before use, as do so will enhance the taste and flavors of the sauce. This fermentation process is how the restaurants prepare this seasoning sauce. (A valuable trick I learned from one of my aunt's restaurants in Korea.) Now, if you are in a pinch, you can use this seasoning sauce right away to make your spicy Korean dishes. Store the sauce in the refrigerator and use it within four to six weeks.
