Korean Tofu 4 Ways VEGAN Recipe +Mukbang Soodubu, Tofu Salad, High Protein Meals Tofu Banchan 두부반찬

Korean Tofu (DuBu 두부) is a stable protein ingredient in Korean cuisine. Tofu is used in so many stews (Jjigae 찌개), from Kimchi Jjigae (김치찌개), SoyBean Paste Jjigae (DoenJang Jjigae 된장찌개), Fish Soup/MaeUnTang (매운탕), etc.). And of course, the iconic Korean Soft Tofu Stew (SoonDuBu Jjigae 순두부찌개) that is made with Extra Soft Tofu (a.k.a. Silken Tofu). Tofu is also famously used to make many delicious side dishes (BanChan 반찬), from Spicy Braised Tofu (Dubu-Jorim 두부조림), mashed with broccoli or with other vegetables (두부 브로콜리 무침), pan-seared (DoBu BuChim 두부부침) or steamed tofu (Jjim DuBu 찐두부) with soy-sauce dipping sauce (GanJang YangYeom 간장 양념).

And extra soft tofu can be enjoyed as your high-protein breakfast porridge.

Korean Tofu is made with soybean milk and comes in three textures: Extra Soft Tofu/Silken Tofu (SoonDuBu 순두부), Semi-Firm (for soups/stews JjigaeYong 찌개용), and Extra Firm (BuChim Yong 무침용). Other Asian tofu is sometimes made with other ingredients, such as egg and different grains and beans. In other Asian cuisines, tofu is also fermented, pickled, frozen, or dehydrated dried.

INGREDIENTS

Extra Soft Silken Tofu Bowl

12 - 14 oz Extra Soft Silken Tofu Package

1/2 Tsp Soy Sauce

1 to 2 Pinches of toasted sesame seeds (less than 1/4 Tsp)

Extra Soft Silken Tofu Bowl With Vegetables

All the ingredients listed above

4 to 6 Thin sweet red and/or yellow bell peppers slices

4 to 6 Small broccoli pieces (previously blanched and chilled)

8 to 10 Thin toasted seaweed strips

Soy-Sauce Dipping Sauce (GanJang YangYeom 간장 양념)

2 Tbsp Soy Sauce

1/2 Tbsp GoChuGaRu 고춧가루 (Korean Red Pepper Flakes)

!/2 Tbsp Shallots (finely minced)

1/2 Green Onions/Scallions (green part only, finely minced)

1/2 Tsp Toasted Sesame Seeds

1/2 Tsp Sesame Oil

1/8 Tsp Garlic Powder

(Extra Firm Tofu: Cut into square slices, used half container in the video)

Tofu Salad

12 - 14 oz Extra Firm Tofu Package (cubed)

1.5 - 2 Cups Arugula/Rockets

1.5 - 2 Cups Romaine Lettuce (sliced thin)

1 Tbsp Roasted Pumpkin Seeds (preheat before use)

Vegan Soy-Sauce Salad Dressing For Tofu Salad

1 Tbsp Soy sauce dipping sauce

RECIPE INSTRUCTION

Extra Soft Silken Tofu Bowl:

Gently pinch to squeeze out the extra soft tofu into a bowl. Using a spoon, gently break up the tofu. Cover with a sheet of saran wrap and heat in the microwave (60 seconds or longer depending on your microwave power). Remove the saran wrap. Add the soy sauce and the Korean roasted sesame seed salt. Yup, as simple as that to enjoy this velvety-melts-your-mouth silken tofu. You can also enjoy this with cold silken tofu, especially during the hot summer months...YUM😋

Extra Soft Silken Tofu Bowl With Crunchy Vegetables:

I prefer to have this with cold silken tofu, but you can also enjoy it heated in the microwave. Add the vegetables listed in the ingredients list, drizzle the soy sauce and garnish with Korean roasted sesame seeds and roasted seaweed strips. Yup, again, as easy as that to make this delicious bowl of yummy and creamy extra soft tofu, with bites of crunchy vegetables bursting in your mouth...OMG YUM🥰

Soy Sauce Dipping Sauce For Extra Firm Tofu Slices:

Combine all the ingredients into a mixing bowl and mix well using a small whisk. You can enjoy this dipping sauce right away or make it a few days in advance (just store in the refrigerator). This is a great condiment to use so many things. You can just add some to a bowl of steaming Korean rice, throw on some kimchi, some firm tofu, julienned romaine lettuce and mix well....drooling delicious in your mouth. Yup, so simple and yet SO YUMMY. Try this simple bibimbap (Korean mixed rice bowl) and you won't regret putting this delicious combination in your mouth😎

Simple drizzle this dipping sauce on your extra firm tofu square slices. If you want to make it extra pretty, garnish with Korean chili threads.

Tofu Salad Dressing (low calorie and vegan-friendly):

In a medium mixing bowl, add all the ingredients and mix well using a whisk. Taste it to make sure it is to your liking in terms of its sweetness. I prefer to have my salad dressing as less sweet as possible, but if you prefer it sweeter, add more honey.

Tofu Salad:

In a large mixing bowl, add the cubed extra firm tofu and salad dressing, and gently coat the tofu with the dressing. Transfer the tofu to a plate, leaving the rest of the remaining salad dressing on the mixing bowl. Then add the arugula, romaine lettuce, and sweet bell pepper slices and gently mix well. Transfer the greens to a plate, place the tofu cubes on top of the greens. Preheat your roasted pumpkins seeds so it is warm, then sprinkle it on top of your tofu. This is such a great salad with minimal calories, and most importantly, it is delicious so you feel satisfied. Not like you have been cheated eating some boring, bland and tasteless salad, all because you are trying to curb your calorie intake/on a diet...🤪
