How To Make Korean Shaved Ice Dessert w/o Ice Shaving Machine: Pat/BingSu Recipe In 4 Ways

BingsSu (빙수) is a classic Korean dessert that consists of a mountain of shaved ice, loaded with a variety of toppings. PatBingSu (팥빙수) is the original BingSu that known for its sweet and slowly stewed beans topping (단팥). (Pat/팥 means Beans. Dan/단 means Sweet. Soh/소) means Filling. Azuki beans are used for Korean sweet and slowly stewed beans.) These sweet beans are commonly used for sweet fillings (팥소) for Korean pastries. My favorite Korean red-bean pastry is the walnut pastry-balls filled with these sweet beans...YUM!

While PatBingSu will always be the "original" bingsu, this Korean shaved ice dessert has evolved into a category of its own with limitless varieties of toppings. Many Korean cafes and bakeries will offer a handful of different varieties of bingsu menu options with special toppings. I, sometimes, get lost in 'food dilemma' because I cannot decide on which bingsu to order. I know, the struggle is real...:-)

So, in this video recipe, I share my Top Four BingSu Topping Options:

(Serving Size: 1 - 2 Adults - 2 cups of shaved ice, plus toppings)

To Make The Shaved Ice:

1/2 cup water

1/2 cup milk

1 cup ice cubes

1 scoop vanilla ice cream

1/4 Tsp vanilla extract

Toppings For PatBingSu (Sweet Red Bean BingSu)

2 to 3 Tbsp Sweet Red Beans

1 scoop of Red Bean Ice Cream

2 to 3 Tbsp Fresh Blueberries

2 to 3 Tbsp Diced Fresh Strawberries

2 to 3 Tbsp Diced Cantalop

12 to 16 pieces Mini-Size Sweet Rice Cake/Mochi

1/2 to 1 Tbsp MiSuGaru (Korean multigrain shake powder)

Chocolate syrup to drizzle on top

Toppings For Green Tea Matcha BingSu

1 scoop of Green Tea Ice Cream

1/2 Tbsp Matcha Powder

2 to 3 Tbsp Cubed Brownies

3 to 4 slices of Fresh Strawberries

12 to 16 pieces Mini-Size Sweet Rice Cake/Mochi

Chocolate syrup to drizzle on top

GreenTea Poky Sticks (optional)

Toppings For Coffee BingSu

1 scoop of Coffee/Espresso Bean Ice Cream

6 to 8 pieces of Korean Snack: MatDongSan

1 to 2 oz Iced Coffee (Use Korean Instant Coffee Packet) OR Cold Black Coffee/Espresso Shot

1 Packet of Korean Instant Coffee Mix

6 to 8 Espresso/Coffee Beans

RECIPE INSTRUCTION

To Make The Ice Slush:

Add the water, milk and ice cream to a blender, and let it run on low speed for 10 to 15 seconds. (Make sure to remove the inner core top of the blender lid and cover with a kitchen towel to prevent spillage.) Slowly add the ice cubes, one at a time, to the blender (blender is now at high speed setting). Once you have added all the ice cubes, add the vanilla extract and blend for another 10 to 15 seconds on high speed setting.

Pour the liquid into a Ziplock bag. Holding the bag upright, place your fingers on top of where the liquid ends, and gently press out any air inside the bag. Seal the bag firmly. Using a flat tray or a small baking sheet, lay down the bag flat, and fold over the 1/4 of the top portion of the bag. (As shown in the video.)

Place the tray with the bag, laying down, in your freezer. Depending on how powerful your freezer is, it may take any where from 15 minutes to 60 minutes for the liquid to become slushy/semi-solid. Keep an eye on it and check every 15 minutes. You do not want the liquid to be frozen rock hard.

You want the liquid to be turned into slushy and pillowy texture (there should be no liquids).

Once the liquid has turned into slushy texture, using a rolling pin, gently press and roll over the bag of slush. This is to even out any lumps.

(If you happened to have lost track of time and the liquid has turn rock-solid, no worries. It happens to me all the time when I just have too many things to do! Take your rock-solid frozen bag and lay it flat on your cutting board. Using a mallet (smooth part), gently tap the frozen bag a few times on both sides. Do not be aggressive with the mallet as you might rip and break the plastic bag. Let the frozen bag rest on the cutting board for 3-5 minutes. Then, using it a rolling pin, break up the lumps and create a smooth ice slush.)

Make sure to seal the bag again and turn over the bag. Holding one bottom corner of the bag, use scissors to cut off the corner. Turn the bag over so the cut-corner is now facing your BingSu serving bowl and squeeze to pour the ice slush in the bowl.

Now, your BingSu slush is ready to be dressed with your favorite toppings. ENJOY!

Dressing Up Your PatBingSu (Sweet Red Bean BingSu)

Using a baker's duster, sprinkle a generous amount of the MiSuGaRu on the ice slush. Add the ice cream on the center top of the ice slush and the fruit toppings around the base of the ice cream. Place the sweet rice cake/mochi pieces around the ice cream. Drizzle the chocolate syrup on top. Sprinkle more of the MiSuGaRu powder all over the toppings. For a final touch, add a small piece of fresh mint on top.

Dressing Up Your Green Tea Matcha BingSu

Using a baker's duster, sprinkle a generous amount of the Matcha powder on the ice slush. Add the ice cream on the center top of the ice slush. Then add the brownie pieces and strawberry slices around the base of the ice cream. Drizzle the chocolate syrup on top. Sprinkle more of the Matcha powder all over the toppings. For a final touch, add a small piece of fresh mint on top. Optional: Stick a few pieces of the Green Tea Poky Sticks.

Dressing Up Your Coffee BingSu

Pour a shot of the Korean iced instant coffee (OR cold black coffee/espresso shot) to the ice slush. Sprinkle about a half packet of the Korean instant coffee packet on the ice slush. Add the ice cream on the center top of the ice slush and the Korean snack (MatDongSan) around the base of the ice cream. Place the whole coffee/espresso beans on top of the ice cream. Drizzle the chocolate syrup on top. Sprinkle the rest of the Korean instant coffee packet all over the toppings. For a final touch, add a small piece of fresh mint on top.
