Korean Army Base Stew (aka Army Troop Stew) Budae Jjigae (부대찌개) is an ICONIC Spicy Stew (aka Spicy Korean Sausage Stew) that came to birth at a Korean Army Base, as soldiers longing for spicy stew, resorted to being creative with canned meats (spam, sausage, spam, hot dogs...etc), canned beans, instant ramen noodles, and kimchi. So goes the story of how this Legendary Spicy Army Base Stew was born; Recycling of canned food with kimchi to make a spicy, garlicky and salty stew!

INGREDIENTS
(Serving Size: 2 to 4 Adults, depending on portion size)
3 Cups Kimchi (cut into bite sizes, as shown in the video)
3 Cups Korean Beef Bone Broth, as shown in Korean Rice Cakes Soup video (watch the video listed above to learn how to make Korean beef bone broth from scratch). See below for short-cut Beef Broth recipe options (Substitution Options: Chicken or Vegetable Broth. See below for additional instructions.)
1/2 Cup Kimchi Juice/Marinade Liquid
1/2 Cup Cooked Butter Beans (or any bean of your choice)
1/2 Cup Corn (fresh, thawed frozen or canned)
1/2 Sweet Peas (fresh, thawed frozen or canned)
1/2 Tteok - Korean Rice Cake, preferable oval-shaped slices (pre-soak in cold water for 10 to 15 minutes)
1/2 Block Firm Tofu (6 to 7 oz.), cut into thick slices
1/2 Medium Onion (cut into think slices)
2 Scallions/Green Onions (cut into diagonal slices)
4 to 5 Garlic Cloves (please use fresh garlic only), finely minced
1 Tbsp GoChuJang - Korean Red Pepper Paste (OR 1Tbsp Spicy Pepper Marinade Sauce, as shown in BulDak Spicy Fire Chicken With Cheese Video. Please see the video listed above. 1 Tbsp is for Standard/Moderate Spicy Taste. For Very Spicy, add 2 Tbsp. For Extra Extra Spicy, add 3 Tbsp. Add more broth to adjust the saltiness to your preference.)
1 Tbsp Honey
1/2 Tbsp Miso Paste
1 Package Sapporo Ichiban Instant Ramen Noodles Only (OR 1 Serving Size Sweet Potato Starch Noodles. Presoak in cold water, fully submerged, for 30 to 40 minutes on your kitchen counter.)
Canned Meat
Spam (half can cut into thin slices)
Vienna Sausage(1 can cut into halves)
2 Large Slices Of Cold Cut Ham (cut into strips)
*You can substitute your choice of meat. Corned Beef, Pastrami, Hot Dogs, Italian Sausage (remove the casing), Pancetta, Bacon...etc.

Turkey Spam, Turkey Bacon, Turkey/Chicken Sausage (remove the casings), Turkey "Ham"
Pescatarian Friendly "Meat" Options
Korean Fish Cakes, aka Oh-Dheng, AuMok, Dempura/deep-fried fish batter/fish spam

To Make Short-Cut Broth For The Army Base Stew
- 3 1/2 Cups Water
- 2 Tbsp Cup Mirin (Rice Wine)
- 1 Tbsp Korean Beef Dashida/Beef Bouillon Powder (Pescatarian Friends, substitute with Korean Anchovy Dashida OR use Seafood Dashi packet listed below. Vegan Friends, substitute with Korean Dried Kelp/Dashima. Use dried kelp size of your hand.)
- 1/2 Tbsp Miso Paste
- 1 Garlic Cloves
- 1 Scallion/Green Onion
- 1 Thick Slice of Korean Radish (1/2" cuts) - If you don't live near a Korean market, you can substitute red radishes (1/2 radish, remove red skin)
- 2 to 3 Peppercorns
- Bay Leaf
- Kosher Salt To Taste
*Bring water to boil. Then add all the ingredients (except Kosher Salt, Beef/Anchovy Dashida Powder), cover with a lid, bring the heat down to low and simmer for 30 minutes. Then add the Beef/Anchovy Dashida and salt to taste.)
To Make the Simplest "Broth" For The Army Base Stew
- 3 Cups Water
- 1 Tbsp Korean Beef Dashida/Beef Bouillon Powder (Pescatarian Friends, substitute with Korean Anchovy Dashida. Vegan Friends, substitute with vegan flavor-enhancer powder/paste.)
- Pinch of freshly ground Black Pepper and Kosher Salt to taste
*Bring water to boil, add the ingredients, and pour in Army Base Stew.

RECIPE INSTRUCTION
In a large wide and shallow pot, add all the meat, kimchi, onions, beans, and tteok/Korean rice cakes, into 3 sections, around the rim of the pot. Then in the center of the pot, add the GoChuJang, honey, miso paste, and minced garlic. (OR 1Tbsp Spicy Pepper Marinade Sauce, as shown in BulDak Spicy Fire Chicken With Cheese Video. Please see the video listed above. 1 Tbsp is for Standard/Moderate Spicy Taste. For Very Spicy, add 2 Tbsp. For Extra Extra Spicy, add 3 Tbsp. Add more broth to adjust the saltiness to your preference.)
Then slowly add your heated broth (do not add cold broth) in the center of the pot, mixing the GoChuJang, honey, and miso gently. Pour the kimchi juice to the broth. Turn on your portable stove to high heat or on your stove. Cover the pot with the lid and let it cook for 5 minutes.
Five minutes later, remove the lid and scoop up the 'pepper foam' floating on top, as shown in the video. Using a ladle, generously coat the ingredients around the rim with the broth. Break the instant ramen noodles into half. Then add the noodles (OR Pre-soaked Sweet Potato Starch Noodles/DangMyeon) in the center of the pot. Gently press down to submerge the noodles and coat with the broth. Cover with lid and cook for 2 minutes on high heat.
Uncover the lid, and gently move the noodles around to mix well in the broth. Turn down the heat to medium. (At this point, the noodles are not cooked all the way, which is what we want. Cooking the noodles all the way will ensure that it will get completed bloated and soak up all the delicious broth super fast). Add the corn, sweet peas, and scallions on the sides of the noodles. Generously coat the vegetables with the broth. Turn off the heat in 60 seconds. Garnish with a sprinkle of roasted sesame seeds on top of the noodles.
Remember, the cooked ramen and sweet potato starch noodles will soak up all the delicious broth quickly. So if you plan on having this meal slowly or wait for your late guests, transfer the cooked noodles to a plate and enjoy them as a side dish. If you let the cooked noodles sit in the pot for too long, it will overcook and get completely bloated.
Highly highly recommend having this Army Base Stew with Korean rice. This stew is meant to be on the saltier side so it will complement well with Korean rice.
