AND GUESS WHAT??? Soju is far less in alcohol content to other distilled spirits like vodka and gin. The alcohol content for Soju is around 15%. This is a great alternative to having a other spirits that are three or four times more in alcohol content, potentially making you too tipsy to enjoy all the wonders of sipping a delicious cocktail...😋

(Serving size: 1 Cocktail)
2 x 1.5 oz Soju Chamisul Fresh (chilled)
2 x 1.5 oz Club Soda (chilled)
1 x 3/4 oz Cointraeu or Simple Syrup (add more if you prefer a sweeter taste)
2 Tbsp Vanilla Bean Ice Cream
2 x 1.5 oz Heavy Whipping Cream
1 Strip of lemon zest peel
Dozen fresh raspberries
For Garnishing: 1 Small Fresh Mint Leaf and 1 Raspberry
Ice Cubes (3 to 4 cubes)

Chill your martini glass with ice and water. Set aside while you prepare the rest of the ingredients. Alternatively, you can store your martini glass in the freezer for about 10 minutes.
In your large cocktail shaker, add the fresh raspberries and soju. Using a muddler, break down the raspberries. Then add the ice cream and using a muddler, mix it well. Add the club soda, Cointreau (or simple syrup) and place the smaller cocktail shaker (upside down) on the large cocktail shaker. Tap the bottom of the small cocktail shaker to secure its seal. Shake the sealed cocktail shakers (up and down motion) for about good 15 to 20 seconds. To unseal the cocktail shakers, tap the rim of the large shaker on your kitchen counter. Using a straw, do a sample taste. If more sweetness is desired, add more and shake again.
Put the cocktail shaker strainer on the large shaker. (Pour out the water and ice in the martini glass.) Pour the liquid into the conical strainer (second cocktail strainer), into the martini glass. Using both strainers will filter out all the raspberries pulp and not into the martini glass. Use a cocktail spoon to stir and gently press down on the raspberry pulp strained in the conical strainer (second cocktail strainer).
Quickly, rinse the cocktail shakers with water. Add the heavy whipping cream and 3 to 4 ice cubes. Seal the shaker with the smaller shaker (just like above) and shake for good 15 to 20 seconds (up and down motion). To unseal the cocktail shakers, tap the rim of the large shaker on your kitchen counter. Using a large spoon, scoop up the cream foam and gently place on top of the raspberry cocktail.
Using a vegetable peeler, shave off a strip of lemon zest. Hold the lemon zest over the cocktail and gently twist to wring out the lemon zest oil on the cocktail. Then take the lemon zest strip and go around the rim of the martini glass once. Then discard the lemon zest.
To garnish, take 1 raspberry and make a slit down the middle. Take a small spring of fresh mint and wedge it on the side slit of the raspberry. Then slide the raspberry on the rim of the martini glass, as shown in the video.
