This Fresh Scallop & Onion Korean Pancake (PaJeon 해물 파전) w/ Soy Sauce Vinaigrette Dipping Sauce Recipe is a great appetizer or a snack that is loaded with protein and vegetables: Sliced scallops, thin slivers of onions, scallions, and garlic, all mixed together with minimal amount of batter. It is a satisfying appetizer/snack that is NOT heavy in batter, compared to your traditional Korean seafood pancake/Jeon. And the soy sauce vinaigrette dipping sauce just elevates the taste of these patties with a perfect balance of saltiness and tanginess...YUM!

INGREDIENT LIST

- 6 Fresh Scallops

- 2 cups Panko (Japanese/Korean bread crumbs)

*Paleo friends, use potato flour

- 3 Tbsp Korean pancake batter flour (substitute white flour)

*Paleo friends, use sweet rice flour

- 2 Eggs

- 4 Stalks of scallions/green onions

- 1/2 Medium white onion (prefer sweet onions)

- 2 Fresh garlic gloves

- Pinches of Kosher salt (1/2 tsp)

- Small pinch of black pepper

- 1/4 Cup of room-temperature water (approximately)

- 2 Tbsp olive oil

- For the Dipping Sauce

1 Tbsp soy sauce

1 Tbsp water

1/2 Tbsp brown rice vinegar (any mild vinegar will suffice)

Tiny drizzle of sesame oil (less than 1/3 Tsp)

1/2 Tsp finely minced scallions/green onions (only the green part)

For optional touch of spiciness, a tiny pinch of cayenne pepper or GoChuGaRu/Korean Red Pepper Flakes.

RECIPE INSTRUCTIONS

- Place the scallops in mesh strainer (w a bowl under the strainer), cover with saran wrap and place in your refrigerator over night (10 hours) to drain the excess scallop juice.

- In a large mixing bowl, add the scallops (sliced thin and cut in half), scallions (cut in half, then cut the green parts in half again. For the upper white part of the scallions, cut splitting down the middle, and cut into half), white onion (thinly slice), garlic (thinly slice), eggs, panko, pancake batter flour, salt, and black pepper. Using your hands, mix well but be gentle. Then slowly add some water (start with little) and mix well. Continue to add the water will you have a doughy batter. Gently pat it down, cover it with saran wrap and place in the refrigerator for 10-15 minutes.

- Preheat your non-stick frying pan. Once heated, keep the heat to medium. Add your oil. Using your hands, take the mixture and shape into a round patty (it does not have to be a perfect circle). Place the patty gently in the frying pan. Let it cook for 2-3 minutes OR golden brown on each side. Place the cooked patty on a cooling rack (wire rack with a sheet of paper towel on top) and let it rest for 2 minutes before serving.

- To make the dipping sauce, mix the ingredients listed above. You can prepare this dipping sauce way in advance. If so, just place in an air-tight container and keep in the refrigerator.
